You state you are using a platen that is 26 x 16 and your plastic size is 26x16?
At least in my design, the platen is smaller than the frame holding the plastic, so that the seal comes from the plate ...

For checking the vacuum, I would put a vacuum gauge in the line.
For your bubbles, I doubt that it is moister (although moister will cause it).

What did you cut that out with...is that a CNC in the video?
Also, those "air vents" that you open in the car under the dash...brought back memories of some of my families ...
